Development of the domestic sugar industry, improve its competitiveness and efficiency leads to an increased need to improve results through the development of scientific and technological progress. Identified the main problems of the industry clearly indicate on significant issues of food security and safety in the sugar industry. In modern Russian sugar production is at the beginning stage of the transformation of the socio- economic space. The process of directing attention is the transformation of sugar production component of the economy is based on principles such as empirical research and the implementation of effective measures to improve the sustainability of the industry and the public sector attention to the problems of food security. Sugar industry requires close attention from the standpoint of strategic management, tactical modernize, improve and enhance the stability of operation, in which the primary role played by innovative activities.
